Alma obtained its first star in the Michelin Guide 2017 and its second star in 2019. This place was born from the ambition of a restaurant entrepreneur, Rui Sanches, who wanted to create an establishment of high gastronomy. Chef Henrique Sá Pessoa was already working for the Sanches restaurants and we can say that as soon as it opened, the restaurant’s menu was aimed at obtaining a star. Henrique’s cuisine perfectly combines ingredients and the flavour of the dishes is described as “amazing” by many critics. The Michelin Guide also indicates that Alma’s dishes are very fine thanks to first-class products and strong flavours.

Chef José Avillez received his first Michelin star when he was the chef of a historic Lisbon restaurant, the Tavares. His career then began to take off with the publication of books, television appearances and the opening of many restaurants throughout Portugal. But his personal pride remains the Belcanto restaurant. This restaurant opened its doors for the first time in 1958, in the chic and historic district of Chiado. In 2012, taken over by Chef Avillez, who had had the building completely restored, the establishment obtained its first star. Followed by a second star in 2014. Belcanto then became the first restaurant in Lisbon to receive this distinction and José Avillez, the first Portuguese chef with 2 stars. In 2015, the establishment was considered one of the 100 best restaurants in the world by the prestigious publication “The World’s 50 Best Restaurants List”. Belcanto has a sophisticated atmosphere in the heart of Lisbon’s most romantic district : Chiado.

Located on the highest hill in Edward VII Park (Parque Eduardo VII), this sophisticated and contemporary restaurant offers a beautiful view of Lisbon. In the kitchen, chef Joachim Koerper prepares a Mediterranean cuisine described as “bright, elegant, modern and innovative”. Koerper is a German-born chef who fell in love with Southern European cuisine and ingredients at an early age and is recognized as one of the most important experts of Mediterranean cuisine. During his career, he has worked in prestigious restaurants in France such as Le Moulin de Mougins (3 stars), Guy Savoy (2 stars) and L’Ambroisie (3 stars). His first restaurant in Spain, Girasol, also won an award (2 stars) and illustrated his philosophy of cooking, which he continues with the Eleven : to make it simple and use local, fresh and natural ingredients.

Alexandre Silva is the winner of a Top Chef edition in Portugal. Many specialists claim that this restaurant was created from the very beginning to propel the chef towards his first Michelin star. The proposed cuisine (14 or 18 courses) is avant-garde, the atmosphere of the place is refined but not formal. The service is impeccable, the restaurant does not serve any à la carte dishes. It is the chef who decides the menu every day through these dishes, also called “moments”.

This star was expected by the Penha Longa Resort hotel complex in Sintra (near Lisbon) and arrived in 2016 with the publication of the 2017 Michelin Guide. For 8 years, the restaurant Arola had been run by the Spanish chef with two stars in Madrid : the Catalan Sergi Arola. In June 2015, the chef opened a second restaurant in the hotel complex: the Lab by Sergi Arola. This new place was designed to promote gourmet cuisine and obtain a Michelin star. From the restaurant room, with a capacity of only 30 seats, you will have a superb view of the luxury hotel’s golf course and the surrounding mountains. The atmosphere is simple and intimate. Chef Arola says he has a particular weakness for Lisbon, although his restaurants are spread over Madrid, Barcelona, Istanbul, Sao Paulo and the Portuguese capital. He recently stated in the Portuguese press: “No other of my restaurants is like this one“. The menu changes 4 to 6 times a year and highlights Spanish cuisine : Galician enpanadas and wild potatoes revisited in particular.

With this restaurant, we stay in the same complex as the previous one : Penha Longa Resort. Exceptionally, this 5-star hotel in Sintra managed to obtain a Michelin star for a second restaurant. Midori has long been one of the leading Japanese restaurants in Portugal. In 2012, it was completely renovated and its atmosphere became even more elegant. The proposed kitchen has been modernised, always maintaining a very high level of quality and exigency. It is logical that in the Michelin 2019 Guide, chef Pedro Almeida obtains a star for this establishment specializing in sushi and teppanyaki.

FORTALEZA DO GUINCHO – 1 Michelin star in Cascais for a wonderful Relais & Châteaux

For this table, you will have to leave Lisbon and go to Cascais, a few kilometres from the Portuguese capital. Since the beginning of 2019, chef Gil Fernandes has been running his one-star restaurant in a wonderful setting : an incredible view of the Atlantic Ocean and the Sintra mountains from a 17th century fortress transformed into a boutique hotel (Hotel Fortaleza do Guincho). The chef already has a long career in top-of-the-range or starred restaurants. For example, it passed through the kitchens of the Tivoli Hotel in Lisbon and the Vila Joya and the Ocean, two tables with 2 stars at Michelin in the Algarve. Abroad, he attended the De Librije, 3 Michelin stars in Holland; and the Geranium, 2 Michelin stars in Denmark. Since 2016, he had been the deputy chief of Fortleza do Guincho. It is only logical that he succeeded the previous starred chef : Miguel Rocha Vieira. Gil is the youngest Portuguese chef to run a starred table in Portugal, having taken the helm at the age of 28. It offers a cuisine that honours the fish and shellfish of the Portuguese coast. Two tasting menus are available and it is also possible to eat à la carte. For desserts, it is the pastry chef Filipe Manhita who is in charge.
